Cake

I forgot to tell you about KTR5's annual cupcake decorating challenge. Their Tutor Teacher, Jarrah, is a bit of a baker and every year she whips up a couple of batches of cupcakes for her tutor class to decorate and give away. I ended up with three on my desk. I gave one away, but ate two!


A couple of weeks ago I was up at Albany Senior High School for PD with the Sydney Centre for Innovative Learning. We had the most delicious date cake at lunch one day. I googled and found this recipe for Sticky Date and Coconut Cake.



It is super moist. It went down well at our Whanau Leaders' meeting. I made it in a square cake tin, which was probably a bit too big so the cake isn't very high. If I made it again, I would make it in the recommended sized tin and use less topping or add more butter to the topping to make it a bit thinner.

I also stirred together some of fellow English teacher Melissa's Mint Chocolate Truffles for our Modern Monday Christmas meeting. I lack the patience needed to do a smooth job when covering things in chocolate. Despite their outward appearance, they are super delicious.
