Deep Dish Apple-only Pie

I had plans to make a pear and apple pie but I forgot to buy pears before Good Friday. Then I was going to add blueberries so put them in the sun to defrost and left them there. So, I have a lovely deep dish apple-only pie.

I made it in a 10" pie tin using 11 medium sized gala apples. It's a really, really slow cooker - taking 2.5 hours at 150 C. Usually, I just throw the apples in, but this time the recipe said to toss them in cinnamon, sugar (I am loathe to add sugar to apples, so I didn't add the full measure) and flour.

It reminds me of the 'world famous' apple pie we had for tea one night at Apple Annie's, in Tulare, California - right in the Central Valley where a lot of fruit and nuts are grown.
